In a frying pan with a drizzle of oil, brown the minced meat and season with salt and pepper. Once the meat is cooked, add the sauce, stirring well to make sure it's even, and place over a low heat.

Top half of a tortilla with the filling, add a little cheddar cheese on top, then fold the other half of the tortilla over the filling. Repeat for all the tortillas.

Place the tortillas on a hot, fat-free frying pan and cook for 2-3 minutes on each side. Once the cheese has melted, remove and cut into 4 wedges.
