10 min.At least 3 hours in advance, prepare the chocolate mousse: Melt the chocolate with 4 tablespoons of water.

10 min.Mix the melted chocolate and egg yolks vigorously.

15 min.Whip the egg whites until stiff with the pinch of salt. Fold the whites into the mixture. Leave the chocolate mousse for 3 h in the refrigerator.

15 min.When the chocolate mousse is ready, dip the boudoirs in the pear syrup and place them in the charlotte mold.

10 min.Layer pears, chocolate mousse and soaked cookies.

Place in the refrigerator for at least 3 h.
