<h5>15 min</h5><p>Open 2 avocados in half, remove the pit, with a tablespoon, extract all the pulp and put it in a food processor, cut into large pieces to facilitate "blending."</p>

<h5>3 min</h5><p>Without delay, pour over the juice of ½ lime, then 1 very finely chopped shallot, a little Tabasco, salt, and pepper.</p>

<h5>3 min</h5><p>Put the food processor on and add 4 tablespoons of olive oil in a small stream to emulsify everything.</p>

<h5>1 hour</h5><p>Let the whole thing make a nice smooth puree (it barely takes a few minutes). Stop the food processor, taste and adjust the seasoning if necessary.</p><p>Put to cool in the fridge for at least an hour, covered, as blending has made the mixture a little warm.</p>

<p><strong>Optional</strong></p><p>Peel 1 tomato and dice it into small pieces, mix with the guacamole.</p>
